The core is the gas range, offered in widths from 24 up to 60 inches in the Heritage and Platinum lines, with configurations that mix open burners, a griddle, a charbroiler, and a French top on one cooktop. The catalog extends to rangetops, wall ovens, and a salamander broiler, along with ventilation hoods sized to the ranges and a line of refrigeration. What sets the buying experience apart is customization: the ranges come in a very large palette of standard and custom colors, along with different trim, knob, and metal finishes, so a range can be ordered to match a specific kitchen. The open burner and its heat
The defining feature is the open gas burner. Rather than a sealed burner that caps output, BlueStar uses an open burner that reaches a high BTU rating for fast boiling and hard searing, and the same burner can be turned down to a low simmer for delicate sauces, giving a wide range on one grate. The oven is a gas convection cavity with a powerful infrared broiler at the top that drives the intense overhead heat used for browning and finishing. Heavy cast grates carry pots across the surface and hold up to daily use, and the layout can be specified with the burner mix a particular cook wants.
